For the kids we cored out an English (hothouse) cucumber, saving the core for later (for good reason). We then rolled organic cheddar cheese in organic smoked turkey, stuffed it into the cucumber, and then sliced it up like sushi. It’s easy, nutrient-rich, and free of nutrient-poor fillers (empty carbohydrates). You can stuff the cucumber with tuna salad, veggies, cream cheese, lox/cream cheese, salame, cashew cream… you name it!
And… for the adults later, muddle the cucumber core with basil or mint and add to a vodka/elderflower liquor/Zevia combo for a low-carb killer cocktail! #StayFierce
