SuperMax’s Peanut Noodle Salad

Max is adamant that he doesn’t like salad. Well, tonight he just ate a whole bowl of salad. I told him, “You do like salad!” And he said, as nicely as he could, “Only if you do it right… like this.”

Here’s the recipe to what we’re calling SuperMax’s Peanut Noodle Salad:

Salad:
Mixed baby greens
Cucumber
Red bell pepper, sliced thin

Protein:
Roast Chicken or whatever floats your boat
Chopped Macadamia Nuts

Noodle:
Shiratake Noodles, rinsed very well and patted dry

Dressing: Ginger Peanut Dressing
6 tablespoons organic creamy peanut butter
5 tablespoons unseasoned rice vinegar
2 tbs fresh lime juice
8 tbs Nature’s Way “Liquid Coconut Oil” (MCT oil)
2 tbs organic gluten free soy sauce
3 tbs of xylitol sugar-free honey
2 drops of stevia glycerine
1 teaspoon of salt (and more if you want)
2 squares of Dorot’s frozen crushed garlic
2 squares of Dorot’s frozen crushed ginger
2 squares of Dorot’s frozen chopped chili
1 teaspoon of sesame oil

Throw all dressing ingredients into a blender. Mix everything together!
